Baked eggs are easy to make in the oven and are the perfect shape for breakfast sandwiches. This recipe is very flexible and can be made with all kinds of veggies, seasonings, meats and cheeses!
1 Tablespoon chopped onion
1 Tablespoon freshly chopped spinach
1 Tablespoon of Milk or Half and Half
1 Tablespoon Grated Parmesan Cheese
Pinch of Garlic Powder
Pinch of Paprika
Salt and Pepper to taste. Preheat oven to 350 degrees.
2. Spray ramekin with cooking spray.
3. Crack egg into ramekin and add onion, spinach, cheese and milk or half and half.
4. Season with salt, pepper, garlic powder and paprika.
5. Place on center rack in the oven and bake for 15-20 minutes or until the middle is set.
