breaded chicken breast with baked spaghetti squashAs I’m putting together this Breaded Chicken Breast with Baked Spaghetti Squash post I keep typing Spaghetti with an “e” on the end. I know there is no “e” on the end of Spaghetti but for some reason I keep typing “Spaghettie.” Guess it’s just one of those weird words ;).
The fact that it is paired with the word squash doesn’t help either because I keep wanting to put “Spaghettie Sauce” instead of “Spaghetti Squash”. Maybe I’m just tired today or maybe it’s because it’s Monday…

Anyhow, I lightened this recipe up by baking the chicken in the oven and by using spaghetti squash instead of pasta. The mild flavor and shape of the cooked spaghetti squash lends itself as a good substitute for pasta. It’s also lower in calories and carbs and provides more nutrients.breaded chicken breast with baked spaghetti squash

Breaded Chicken Breast with Baked Spaghetti Squash

3 Boneless Skinless Chicken Breasts
1 Spaghetti Squash
Pasta or Marinara Sauce
1/2 Cup Italian Seasoned Breadcrumbs
1/3 Cup Grated Romano Cheese, plus more for topping
3 Tablespoons Lemon Juice
1 Tablespoon Extra Virgin Olive Oil
Salt and Pepper to taste
Preparing the Spaghetti Squash:
-Preheat oven to 375 degrees.
-Wash and dry the spaghetti squash.
-Pierce the squash all over with a sharp knife.
-Place the spaghetti squash in a foil lined baking dish. (foil lined=easy cleanup!)
-Bake for an hour.
-Slice off the top of the squash (where the stem is).
-Cut in half lengthwise. (if it’s still hot, use a kitchen towel to hold the squash)
-Spoon out the seeds and fibers. (reserve the seeds for toasting if you wish)
-Use a fork to remove the spaghetti squash from the peel and place in a bowl.
Preparing the Baked Chicken:
-Preheat oven to 450 degrees.
-Wash and dry chicken and slice each breast in half lengthwise.
-Pound out the chicken to an even thickness.
-In a bowl combine lemon juice and olive oil.
-In another bowl add breadcrumbs, cheese, salt and pepper.
-Dip a piece of chicken into the oil mixture and then into the breadcrumb mixture.
-Gently push the crumbs into the chicken to make sure they stick.
-Place the chicken on a baking sheet.
-Repeat dipping the remaining chicken in the oil and then the breadcrumb mixture.
-Bake for 7 minutes on one side and flip over.
-Bake for another 8 minutes or until the chicken is cooked through.
Assembling the meal:
-Heat up your sauce and pour over the top of the spaghetti squash.
-Place a piece of chicken on top, add a little more sauce and sprinkle with more cheese.
