DIY Christmas Gifts – Idea #4

Candied AlmondsSugar and spice and everything nice. That is what you will get with these candied almonds.
A pinch of cloves and nutmeg and a nice coating of cinnamon and sugar make these crispy candied almonds something special. They are so easy to make and as an added bonus your house will smell like a candy shop!Candied Almonds
I created 3 different sized labels that you can print out on label paper and adhere to your candied nuts container or print them on card stock and cut them out to make a hang tag.

Candied Almonds – Idea #4

Recipe Adapted From: The Country Basket
Yield: Makes 1.5 Cups
12 Ounces Raw Almonds (walnuts or pecans would work too)
1 Egg White
1/3 Cup Packed Brown Sugar
1/3 Cup Granulated Sugar
1 Teaspoon Pure Vanilla Extract
2 Teaspoons Cinnamon
1/4 Teaspoon Salt
Pinch of Cloves
Pinch of Nutmeg
-Preheat oven to 250 degrees.
-In a bowl combine sugars, salt, cinnamon, cloves and nutmeg. Set aside.
-In a mixing bowl add the egg white and a pinch of sugar. (The sugar helps the egg white whip up)
-Whip the egg white on high speed until it’s foamy. Add in the vanilla and continue to whip until soft peaks form.
-Add in the almonds and stir to coat.
-Add in sugar mixture and stir to coat.
-Spread the almonds out in an even layer on a greased or parchment lined baking sheet.
-Bake for 1 hour, stirring every 15 minutes to prevent burning.

You can also make these on the stove-top but they don’t have the same crispness as the oven-roasted nuts. Instead of an egg white you’ll make a sugar syrup to coat the nuts and cook them until the sugar crystallizes.
I made these candied walnuts using the stove-top method. To make them “snowy” I sprinkled them with more cinnamon and powdered sugar while they were still warm.Candied Almonds
Yet another method for making candied nuts is to use the Slow Cooker.  I haven’t used this method myself but it would be convenient if you were making a big batch of them.
