Coconut Meringue Cookies

Looking to bite into something light, chewy and coco-nutty? These Coconut Meringue cookies are just the thing. This recipe is really simple to make and is very versatile. For the chocolate lovers out there, try adding cocoa powder to the mix, or change up the flavors and add in almond extract, orange extract, or any flavor your heart desires.Coconut Meringue Cookies
To make these Coconut Meringue cookies just beat egg whites until soft peaks form and then gradually beat in the sugar. Fold in the shredded coconut and vanilla extract and and then drop onto a greased baking sheet and bake for 15-20 minutes.

Allow to cool and then bite into a gooey, chewy, melt in your mouth, Coconut Meringue!

Coconut Meringue Cookies

2 Egg Whites
2/3 Cup Granulated Sugar
1/4 Teaspoon Vanilla Extract
Dash of Salt
1 1/2 Cups Sweetened Shredded Coconut
-Preheat oven to 325 degrees F.
-In a bowl beat the egg whites with a dash of salt until soft peaks form.
-Add in the sugar a little at a time, beating until stiff, glossy peaks form.
-Gently fold in the shredded coconut and vanilla extract.
-Drop by rounded teaspoon onto a well greased baking sheet.
-Bake for 15-20 minutes or until they are just starting to slightly brown. The centers will remain soft but the cookies should be set.

Variations

For Chocolate Coconut Meringue Cookies: Add one tablespoon of cocoa powder when you are folding in the shredded coconut and vanilla.
For Enhanced Coconut Flavor: Toast the shredded coconut before folding in.
For other flavors: Add in 1/4 teaspoon of different extracts like almond or orange.
For less sugar: Use only 1/3 Cup  for a less sweet meringue cookie

Egg White Peak Stages:

Soft peaks: This stage is where the peaks are just starting to form. They are still soft and will melt back into themselves.
Stiff Peaks: At the stiff peak stage the peaks should stand up straight and will not fold back over on themselves.

    This recipe is the bomb: Coconut meringue cookies are my favorite. Ever since I was little. And I was trying to find a recipe like my mom’s and this pretty much is a replica….these are sooo perfect, there soft and chewing and a little crispy and super easy to make. I made them with toasted coconut which I think adds more flavor and texture. Very satisfied!
