Cold Quinoa Salad

I have made Quinoa (“KEEN-wah”) before but never really liked it all that much. That is, until now.

Maybe I like it better in a cold dish or maybe I just got the seasoning right this time. Whatever the case may be, this bright and crunchy Quinoa salad is sure to please. It’s a perfect summer dish that pairs well with grilled meats or veggies. It’s also a good meal on it’s own…I had it today for brunch.

Technically speaking, Quinoa is not a grain but rather a seed that has been around for thousands of years. The Incas actually referred to it as “mother of all grains” and believed it was a sacred crop. Quinoa not only provides a good source of protein but is considered a complete protein. Cold Quinoa Salad

Cold Quinoa Salad

1 Cup Quinoa
2 Cups Chicken Stock
1/2 Teaspoon Salt
1 Red Bell Pepper
1 Cucumber, seeded
3 Green Onions
1 Tomato
For the Dressing:
1/4 Cup Extra Virgin Olive Oil
1 1/2 Tablespoons Lemon Juice
1/4 Teaspoon Salt
1/8 Teaspoon Pepper
Sprinkle of Parsley
-Add quinoa, chicken stock and salt to a saucepan.
-Bring to a boil and then cover, reduce heat to low and simmer for 15-20 minutes or until all the liquid is absorbed.
-Remove from the heat and allow the quinoa to cool.
-Meanwhile, chop your veggies into small pieces and add them to a large bowl.
-Once the quinoa has cooled, add it to the chopped veggies and combine.
-In a small bowl, whisk together the olive oil, lemon juice, salt, pepper and parsley.
-Pour the dressing over the salad and mix well.
-Eat immediately or cover and chill in the fridge to allow the flavors to develop more.
