Creamy Mashed Potatoes

Ask me what my favorite food is and I will tell you creamy mashed potatoes. I love mashed potatoes so much I even used to eat them for breakfast. If I had to live off of them I so could!

Growing up, my mom would cook us a special birthday dinner of our choosing. When my birthday rolled around I always chose chicken with mashed potatoes and gravy. Simple maybe, but mmm mmm, delicious!
For my good ol’ mashed potatoes, I used petite red potatoes (Yukon Gold are my second favorite), milk, butter and salt. I mash it all up until I am left with a big bowl of creamy mashed potatoes. I like to make skin on mashed potatoes but you can peel them if you’d like.

Creamy Mashed Potatoes

Makes about 6-8 Servings
3 lbs Petite Red Potatoes
2 Tablespoons Butter
1/4 Cup Milk
1 Teaspoon Salt
1/4 Teaspoon Pepper
-Scrub your potatoes throughly and remove any bad spots.
-Quarter the potatoes and place them in a large stockpot.
-Add enough water to cover them by an inch or two and 1/2 Teaspoon Salt.
-Bring to a boil and then reduce heat so they are at a gentle boil.
-Cook until they easily slide off a fork when you poke them, about 15-20 minutes.
-Drain and return the potatoes back to the pot.
-Add in butter, salt, pepper and milk.
-Mash up with a potato masher.
-Give a quick stir with a spoon to ensure everything is mixed together.
