Green Onion Soup

This is quite possibly the quickest soup you will ever make. Though simple, with just a few ingredients, it’s full of flavor. Chopped green onions and garlic are quickly sautéed in a little extra virgin olive oil just until tender and then simmered in chicken broth for about 10 minutes. That’s all there is to it to make this quick and healthy soup.
If you wanted to bulk it up a bit you could add in some cooked rice or serve with a salad.
I like to eat mine just how it is with a side of crusty bread topped with some melted cheese.Green Onion Soup

Green Onion Soup

Makes 4 Servings
15 Green Onions, chopped
3 Cloves of Garlic, minced
Extra Virgin Olive Oil
4 Cups of Chicken Broth
1/2 Teaspoon Salt
1/8 Teaspoon Pepper
-In a saucepan over medium-low heat, sauté garlic and onions in oil for a few minutes until softened (3-5 minutes)
-Add in chicken broth, salt and pepper.
-Stirring occasionally, cook on medium-low heat for about 10 minutes or until soup is heated through.

Scallions Vs Green Onions

The terms are often used synonymously though there is a small difference between the two. They can be used interchangeably in a recipe and you probably won’t notice a difference.
A Scallion is an immature onion that is straight in appearance throughout it’s length and has a bit milder taste.
A Green onion is a slightly more mature onion that has a more curved base or bulb on the end and has a little more bite.
