Grilled Italian Chicken

Monday I shared with you my simple but tasty mashed potatoes. Today I have a recipe for grilled Italian chicken that compliments the potatoes. Just add a nice green salad to round it all out and dinner is on the table in no time.

Grilled Italian Chicken

I lightened up the grilled Italian chicken a bit by marinating it in chicken stock rather than oil and coated it with salt, pepper and Italian seasoning. Fire up the grill and throw the chicken on there for more flavor and to keep the heat outdoors.

Grilled Italian Chicken

2 Boneless Skinless Chicken Breasts
1 Cup Chicken Stock
1 Tablespoon Italian Seasoning
1/4 Teaspoon Garlic Powder
Salt and Pepper to taste
-Place chicken in a plastic bag or a shallow dish.
-Season with Italian seasoning, salt and pepper.
-Pour chicken stock over top.
-Marinate for at least 30 minutes.
-Heat up the grill.
-Place chicken on the grill and allow to cook for about 7-8 minutes each side or until cooked through.
-Remove chicken from the grill and allow to rest for 15 minutes before serving.
