Homemade Chicken Noodle Soup

 

Ingredients
6 Ounces Pasta Noodles (I used whole wheat)
2 Carrots, chopped
1/2 Medium Onion, chopped
2 Celery Stalks, chopped
1 Tablespoon Extra Virgin Olive Oil
2 Chicken Breasts, Cooked and Shredded (See Poaching Chicken)
32 Ounces Chicken Broth
1 1/2 Cups Water
1/2 Teaspoon Poultry Seasoning
1/2 Teaspoon Thyme
1/2 Teaspoon Salt (+more to taste)
1/4 Teaspoon Black Pepper
1/4 Teaspoon Garlic Powder
1/4 Teaspoon Onion Powder
Pinch of Coriander
Cook pasta noodles according to package directions. Drain.
In a large saucepan add oil and saute carrots, celery and onion over medium heat until tender, about 3 minutes.
Add in chicken broth, water, seasonings, cooked noodles and shredded chicken.
Reduce heat to low and simmer for 10-15 minutes until flavors meld.
