Homemade Chocolate - Sprightliest.comIt’s early morning when my eyes finally pop open. Immediately they shut again. The sun is already up and filtering light through the blinds. The birds are chirping their favorite songs. Time to rise and shine.
My first thought is coffee. I need coffee.
I reluctantly pull myself out of bed and throw on some clothes. I let the little monster (Finley) out of his cage.
As I walk into the kitchen and turn the coffee maker on it flashes blue and notifies me that I need to add water. So I add water to the reservoir and wait for the machine to do its thing.
I look down and see the little monster sitting there looking up at me. He is patiently awaiting his breakfast. “Ok, ok I’ll feed you your breakfast,” I say to him. He gives me a sideways glance and his ears perk up at the word breakfast. I fill his bowl with food and he’s content for now, chomping away.
Coffee in hand, I turn on my computer and check my email. The majority of it is junk. Then I jump on over to Pinterest and happen to come across this gem – Homemade Chocolate Bars using coconut oil. Is there anything coconut oil can’t do? I’ve used it in everything from cooking and baking to moisturizing my skin, now I discover I can make chocolate bars with it!? Hallelujah!
Almost immediately, I get to work in the kitchen, measuring out the coconut oil
and melting it in the microwave. Then stirring in some honey. Next comes the cocoa powder and I add some pure vanilla extract for good measure. As I stir it all up it becomes silky smooth like a glassy chocolate lake. I pour the mixture into a flat container and place it in the freezer.
When I check back a few hours later, it has firmed up into a solid piece of dreamy chocolate. I break off a tiny piece and pop it in my mouth. As it slowly melts away, I savor the taste of the slight coconut and rich chocolate flavor. It’s a winner in my book, folks! This is going to be a sweet day!

  1. 1/4 Cup Coconut Oil
  2. (measured solid)
  3. 1/4 Cup Cocoa Powder, unsweetened
  4. 1 Tablespoon of Honey
  5. 1 Teaspoon Pure Vanilla Extract
  1. Melt coconut oil in the microwave.
  2. Stir in the honey.
  3. Add in the cocoa powder and vanilla and mix until smooth.
  4. Pour into a flat container or ziploc bags and freeze until firm.
  5. Slice into squares or break off pieces as you please.
