Poached Chicken Breasts
Place thawed chicken breast in a saucepan and add enough water to cover. Season water with salt and pepper. Bring water just to a boil and reduce heat to a simmer. Cook for 15-20 minutes or until chicken is cooked through.
Poached chicken is very versatile. Shred chicken and add it to your soup, chop it into cubes for salads, or slice it up for sandwiches.
Other spices can be added to the poaching water to create a more flavorful chicken. I’ve used oregano, paprika, cayenne pepper, Adobo seasoning, and garlic powder depending on how I will be using the chicken.
