Mini Cheesecake Bites with Oat Crust

One of my favorite “tools” in the kitchen is my mini muffin pan. I especially love using it to create miniature versions of dessert. Not only are bite size desserts super cute, they have built in portion control.
I can eat one or two bite size desserts in place of a full size dessert and actually feel like I’m eating more (or at least trick my brain into thinking so!). I tend to eat them slower and savor them longer too.
These mini cheesecakes bites are made with an oat crust and are topped off with a thin layer of sour cream. The sour cream adds a nice tang and it creates a perfectly smooth top that will help hide any cracks that may have developed when baking.

Since it’s only the two of us, I made this a small batch recipe. (I don’t need a lot of goodies laying around to tempt me!)
I also used the least amount of sugar and butter possible to save a few calories, but these are so good you won’t even notice!

Mini Cheesecake Bites with an Oat Crust

Makes about 8 Mini Cheesecakes
For the Crust:
1/2 cup Oat Flour (make your own by blending old fashioned oats into a powder)
1 Tablespoon Granulated Sugar
1 1/2 Tablespoons Unsalted Butter, melted
Tiny Pinch of Salt
For the Cheesecake Filling:
4 Ounces Cream Cheese, softened (I used Neufchatel cheese which is 1/3 less fat than cream cheese)
1 Egg
1/2 Teaspoon Pure Vanilla Extract
2 Tablespoons plus 2 Teaspoons of Granulated Sugar
Sour Cream for topping (I used light sour cream)
Chopped Walnuts for topping
-Preheat oven to 350 degrees.
-Coat a muffin pan with cooking spray or line with baking cups.
-Mix together oat flour, sugar, butter and salt.
-Push a small amount of the crust mixture into the bottom of each muffin cup.
-Beat the cream cheese, egg, vanilla and sugar together until combined.
-Pour filling in each muffin cup until almost reaching the top.
-Bake for 20 minutes or until centers are almost set.
-Remove from the oven and allow to cool for a few minutes.
-Coat the tops with a thin layer of sour cream and top with chopped walnuts.
-Chill before serving.
