One of my favorite tools to use in the kitchen is my mini muffin pan – mainly because I don’t have a regular sized one, nor do I have any cake pans – but besides that I just like making miniature sized foods.
Tiramisu is my fiance’s favorite dessert so I thought it would be fun to make these mini Tiramisu cupcakes.
To make the cupcakes a box of devil’s food cake mix is combined with sour cream, eggs, instant coffee granules and water.
For the topping layers a brushing of coffee liqueur is applied to the cupcakes, followed by a dollop of mascarpone cheese that has been mixed with powdered sugar and vanilla extract and finished off with whipped cream and shaved chocolate or unsweetened cocoa.
These may sound difficult to make but they really are not. After storing them in the fridge for a day or two they taste even better!
