I bet these would also be really good with cashew butter or almond butter. I’m planning on making my own nut butters soon so I will have to try it out and let you know.

No Bake Peanut Butter Balls

2 Tablespoons Natural Peanut Butter
1 Tablespoon Honey (I used local, raw, Orange Blossom Honey!)
1/2 Cup Puffed Brown Rice Cereal (I used Arrowhead Mills Puffed Rice Cereal)
1/4 Cup Chocolate Chips (I used semisweet since it’s what I had on hand, but dark chocolate or cocoa nibs would be even better)
Yield: Makes about 6 ping pong size balls.
- Melt peanut butter in the microwave until it becomes liquid, about 1-2 minutes.
– Stir in honey.
– Add the puffed rice and chocolate chips and mix well.
– Place the mixture in the fridge for about 5-10 minutes to firm up and then roll into balls.

    Just as a side note, I work on a private yacht as a stewardess, first mate and also a chef. When I have more than one job to do, it’s hard to find great tasting quick recipes to make desserts and hour durves. I recently tried these no bake peanut butter balls and found that it’s a new recipe adding to my book! There are usually young kids on the boat every other weekend and will love these as much as I did!
