Black Bean Soup Recipe

Soup is one of my go to meals when I want something healthy, quick and with minimum effort. This black bean soup is a super easy and delicious dish for those nights when you want something tasty but don’t have a lot of time or the energy to cook. A can of black beans, combined with chicken broth and seasoning is all it takes for this healthy meal.

Makes about 2 Servings
1 Can of Black Beans
1/4 Cup Chicken Broth
Salt to taste
1/8 teaspoon Pepper
1/4 teaspoon Garlic Powder
1/4 teaspoon Onion Powder
1/4 teaspoon Oregano
1/4 teaspoon Chili Powder
1/4 teaspoon Cumin

  1. Place beans in a small saucepan and bring to a simmer over medium heat.
  2. Add chicken broth, salt, pepper, garlic powder, onion powder, oregano, chili powder and cumin.
  3. Reduce heat to low and let simmer until heated through.
  4. Mash up about half of the beans using a potato masher and leave the rest whole.
  5. Serve and enjoy!

*I like to top mine with a dollop of sour cream and serve with crunchy tortilla chips.
