Soup is one of my go to meals when I want something healthy, quick and with minimum effort. This black bean soup is a super easy and delicious dish for those nights when you want something tasty but don’t have a lot of time or the energy to cook. A can of black beans, combined with chicken broth and seasoning is all it takes for this healthy meal.
Makes about 2 Servings
1 Can of Black Beans
1/4 Cup Chicken Broth
Salt to taste
1/8 teaspoon Pepper
1/4 teaspoon Garlic Powder
1/4 teaspoon Onion Powder
1/4 teaspoon Oregano
1/4 teaspoon Chili Powder
1/4 teaspoon Cumin
- Place beans in a small saucepan and bring to a simmer over medium heat.
- Add chicken broth, salt, pepper, garlic powder, onion powder, oregano, chili powder and cumin.
- Reduce heat to low and let simmer until heated through.
- Mash up about half of the beans using a potato masher and leave the rest whole.
- Serve and enjoy!
*I like to top mine with a dollop of sour cream and serve with crunchy tortilla chips.
