Healthy Homemade Salad Dressing
After purchasing a big bag of green onions from the grocery store I had to come up with some creative ways to use them up. I’ve been wanting to make a healthy homemade salad dressing so this was the perfect opportunity to make a Scallion Dressing.
I thought about what flavors would compliment the mild Scallions and came up with ginger, carrot, garlic, white wine vinegar and tangy Dijon mustard. A bit of sugar and olive oil round out the dressing.
I like my salad dressings a bit zippy so I added more vinegar than oil. The result is a fresh and zesty Scallion dressing that will brighten up any salad.
2 Tablespoons White Wine Vinegar
1 Tablespoon of Extra Virgin Olive Oil
1/2 Teaspoon Ginger Paste (An equal amount of fresh, grated ginger would work too)
1 Small Clove of Garlic
1 Teaspoon Tangy Dijon Mustard
1/4 Teaspoon of Sugar
2 Teaspoons Water (to thin out)
1/4 Teaspoon Salt
1/8 Teaspoon Pepper
Add all ingredients to a blender or food processor and puree. Makes about 1/3 Cup of dressing.
Serving Size: 2 Tablespoons of Dressing: 74.8 Calories, 5.6g Fat, 2.8g Sugar
