Small Batch Chocolate Chip Cookies

Lately I’ve been craving sweets. The other day I really wanted a chocolate chip cookie but with only two of us living in the house I knew it wouldn’t be a good idea to make a full batch. I would wind up eating them every day until they were gone (not good for the waistline). For the most part I try to eat healthy but I still need a treat every once and awhile. I gave in to my craving when I found this small batch recipe for chocolate chip cookies – perfect! I could have my cake (or cookie) and eat it too! This recipe yields about 8-10 cookies depending on the size you make them.
SMALL BATCH BAKING: CHOCOLATE CHIP COOKIES

3 tablespoons unsalted butter, softened
3 tablespoons packed brown sugar
3 tablespoons granulated white sugar
1 tablespoon beaten egg [reserve the rest for later]
1/2 teaspoon vanilla extract
1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 cup unbleached all-purpose flour
1/2 cup chocolate chips
- Preheat oven to 375 degrees F. Line a cookie sheet with parchment paper.
– Combine flour, baking soda and salt in a small bowl.
– In another small bowl cream the butter and sugar.
– Mix in 1 tablespoon of the beaten egg and the vanilla extract.
– Add the flour mixture and continue beating until thoroughly combined.
– Stir in the chocolate chips.
– Spoon rounded balls of dough onto the baking sheet.
– Bake for 10-13 minutes.
