Split Pea Soup
It’s getting to be that time of year where the weather turns cooler and a big bowl of soup is what I crave. Something about soup just hits the spot and warms the soul.
Split peas don’t require a soaking so this pea soup is quick and easy and is ready in about 30 minutes.┬áSplit peas are also high in protein and fiber which makes this a filling meal in itself.
Now while you could cook the split peas in water, I prefer to cook them in either chicken or vegetable stock so they are more flavorful. Then I like to add a dollop of Greek yogurt or sour cream and serve with a piece of cheese toast or garlic bread.Split Pea Soup

Split Pea Soup Recipe

1 Pound Dried Green Split Peas
32 Ounces Chicken Stock (or Vegetable Stock)
1 Tablespoon Extra Virgin Olive Oil
2 Cloves of Garlic, minced
1/2 Medium Onion, chopped
Salt and Pepper to taste
-Sort and rinse the split peas.
-Heat oil in a large stockpot over medium heat.
-Add in chopped onion and cook until softened, about 5 minutes.
-Add in the minced garlic and cook for a minute longer.
-Pour in chicken or vegetable stock and bring to a boil.
-Stir in the split peas.
-Reduce heat to a simmer.
-Cook for 20-30 minutes or until peas are at desired tenderness.
-Season with salt and pepper.
