Spinach and Strawberry Salad with Balsamic Vinaigrette
Typically I don’t like fruit in my salad…but a spinach salad topped with sliced strawberries and drizzled with a Balsamic Vinaigrette is the exception. The combination of perfectly ripened strawberries, baby spinach and the sweet and tangy balsamic sure is tasty! I paired this salad with a homemade egg and cheese on an English Muffin sandwich for a delicious dinner.
Spinach Salad:
Baby Spinach
Sliced Cucumber
Romaine Lettuce
Croutons
Sliced Strawberries
Combine baby spinach, romaine and cucumber in a bowl. Top with sliced strawberries and croutons and toss with balsamic vinaigrette dressing.
Balsamic Vinaigrette Dressing for Strawberry Spinach Salad:
1 1/2 Tablespoons of Balsamic Vinegar
2 Tablespoons Extra Virgin Olive Oil
1/4 teaspoon minced garlicPinch of Salt
Pinch of Pepper
Pinch of Sugar
Add vinegar, garlic, salt, pepper and sugar to a small bowl. Slowly pour oil into bowl while whisking rapidly until it’s incorporated.
*Amounts listed make about 1/4 cup of dressing
