Avocado RanchI couldn’t have come across this vegan ranch dressing from Girl Makes Food at a better time. My mother-in-law gave me this huge avocado she got from a neighbor and it was getting to be too ripe so I needed to find an avocado recipe to use it in. I didn’t have any fresh herbs on hand but I used dried parsley, dill from the freezer (you can freeze fresh herbs!) and green onions instead of chives and it came out just fine.Avocado Ranch
I think this avocado ranch is gonna be my new favorite condiment. It can be used as a dip for chips or veggies, a salad dressing, a sauce for tacos, for topping all kinds of dishes, a sandwich spread, in place of tomato sauce on pizza or pasta…the possibilities are endless!

  1. 1 Large Avocado
  2. 1.5 Tablespoons Apple Cider Vinegar
  3. 1 Tablespoon Parsley
  4. 2 Green Onions
  5. 1 Teaspoon Dill
  6. 1/4 Teaspoon Garlic Powder
  7. 1/4 Teaspoon Salt (or more to taste)
  8. 1/4 Teaspoon Pepper
  1. Place all ingredients into a food processor or blender and mix until combined.
  1. Though the vinegar should slow down any browning I like to store the avocado ranch in the fridge in an airtight container with a piece of plastic wrap pressed down over the surface.
