Hello April! You sure came quick.
I woke up this morning thinking about breakfast cookies. What are “breakfast” cookies anyway?
Well, most breakfast cookie recipes I have seen are usually made without flour, sugar and butter making them a healthier option than traditional cookies.
Really though, maybe it’s just a mental or marketing thing. Adding the word breakfast in front of the word cookie just makes it okay to eat cookies for breakfast.
No matter what we call them, these healthier, satisfying cookies can be eaten for breakfast, lunch or dinner.

Awhile back I made these Healthy Oatmeal Cookies that use mashed bananas instead of flour and butter.
I revisited this recipe and decided to add some new flavors to my breakfast cookies: chocolate, almond and coconut. I mixed up a batch this morning and had chewy Chocolate Chip Oatmeal Cookies for breakfast!

Chocolate Chip Oatmeal Cookies

Chocolate Chip Oatmeal Breakfast Cookies - made with mashed bananas, oats, chocolate chips, almonds and coconut. No flour, butter or additional sugar added in (besides the sugar in the chocolate chips and shredded coconut if you use the sweetened kind)

Ingredients
  1. 2 Very Ripe Bananas
  2. 1 Cup Old Fashioned Oats
  3. 1/4 Cup Chocolate Chips
  4. 1/4 Cup Shredded Coconut
  5. 1/4 Cup Almonds, chopped
  6. 1/2 Teaspoon Pure Vanilla Extract
  7. Pinch of Salt
Instructions
  1. Preheat oven to 350 F.
  2. Line a baking sheet with parchment paper.
  3. In a bowl, mash the bananas.
  4. Add in the oats, almonds, chocolate chips, coconut, vanilla and salt.
  5. Mix until well combined.
  6. Drop from a spoon onto the prepared baking sheet.
  7. Bake for 15-17 minutes.

Healthy Oatmeal Cookies

Last night I had a craving for oatmeal raisin cookies. After I pained through a really tough HIIT workout I didn’t want to blow it by eating cookies. I found a healthier version to your typical oatmeal cookies that just uses ripe bananas and oats. To make them even better I mixed in raisins, walnuts, vanilla extract, a pinch of salt, and a drizzle of honey. I just had one for breakfast and they taste like an oatmeal cookie mixed with banana bread! Delicious any time of the day!

Mash bananas with a fork.

Add in oats.

Add in raisins, walnuts, vanilla extract and salt.

Press mixture into a cookie cutter and carefully transfer to a baking sheet -or- drop a tablespoon of the mixture onto a baking sheet and gently press down the top.

Bake 15-17 minutes and drizzle with honey.

Healthy Oatmeal Raisin Cookies
2 ripe bananas, mashed (the riper the better)
1 Cup Old Fashioned Oats
1/4 Cup of Raisins
1/4 Cup of Walnuts, chopped
1/2 Teaspoon Vanilla Extract
Pinch of salt
Honey for drizzling
Preheat Oven to 350 F.
Line a baking sheet with parchment paper.
In a bowl mash up bananas. Add in oats, walnuts, raisins, salt and vanilla extract.
Press mixture into a cookie cutter and carefully transfer it to the baking sheet -or- drop about a tablespoon of the mixture onto baking sheet and slightly press down the top.
Bake for 15-17 minutes. Drizzle with honey and serve warm from the oven!
