Lima Bean Casserole

Buttery Lima beans are mixed with sweet, tangy tomatoes, brown rice and melty cheese.
This Lima Bean Casserole has a comfort food taste but is (mostly) good for you. Lima beans provide a great source of dietary fiber, plant based protein, potassium, iron and magnesium.
A casserole makes a perfect weeknight meal since they can be made ahead of time and then just reheated for dinner. It’s also a great way to use up leftovers you may have like rice and beans and transform them into another dish.

Lima Bean Casserole

1 Cup Dried Lima Beans
1 Cup Minute Brown Rice
1 15oz Can Diced Tomatoes
1/2 Teaspoon Salt
1/2 Teaspoon Garlic Powder
1/4 Teaspoon Black Pepper
1 Cup Shredded Cheese (I used Kerrygold Ballyshannon Cheese which really makes this casserole taste delicious, but you can use any cheese you’d like)
Tomato Slices for Topping
-Sort through and rinse the beans.
-Bring 4 cups of water and 1 cup of Lima beans to a boil.
-Boil for 2 minutes and remove from heat.
-Let stand covered for one hour.
-Drain and rinse the Lima beans and add 4 cups of fresh water.
-Bring the Lima beans to a low simmer and cook until desired tenderness, about 1 to 1 1/2 hours.
-Drain any remaining liquid.
-In a small saucepan, bring 1 cup of water to a boil.
-Pour in the rice and lower the heat to a simmer.
-Cover and simmer for 5 minutes.
-Remove from heat and let stand for 5 more minutes or until all the water has been absorbed.
-In a casserole dish, combine the can of tomatoes, rice, Lima beans, salt, pepper and garlic powder.
-Top with shredded cheese and tomato slices.
-Bake at 350 degrees for 25 minutes or until cheese is melted and casserole is warmed through.
Notes:
*You may need more or less salt depending on if you salt the rice or Lima beans when cooking or if the tomatoes have salt added to them. I like to taste the casserole before putting it in the oven and adjust the seasonings accordingly.
*You can use 1 cup frozen Lima Beans in place of the dried beans if you want to save some time.lima_bean_casserole4
