Easy Pork Chops

I feel like someone hit the accelerator on life in these past few months. Everything seems to be in hyper-speed. It’s been a challenge to try and keep up with the everyday things, let alone the things I want to do.
I try my best to find balance in life: work, family, have to do, want to do and some me time. These quick and easy pork chops came out of my kitchen on one of those days when I was short on time but still wanted a healthy homemade meal.
A sprinkle of seasonings and a thin layer of mustard provide all the flavor you need and help keep these pork chops moist. These easy pork chops cook up in the skillet in just a few minutes.

While the pork chops are cooking, I like to boil some potatoes until fork tender, drain and season them with milk, butter, salt and pepper then mash them up for chunky homemade mashed potatoes. For some added green veggies I also cooked up some frozen peas. Dinner = done!

Ingredients
  1. Spicy Brown Mustard
  2. Garlic Powder
  3. Onion Powder
  4. Paprika
  5. Salt and Pepper
  6. Extra Virgin Olive Oil
Instructions
  1. Squeeze a dollop of spicy mustard on each pork chop and spread out in a thin layer. (About a 1/4 tsp each side, just enough to coat)
  2. Season pork chops with garlic powder, onion powder, paprika, salt and pepper.
  3. Heat oil in a large skillet over medium high heat.
  4. Place pork chops in the hot skillet and cook for 2 minutes.
  5. Flip over and cook for 2-3 more minutes or until they reach an internal temp of 145 degrees. (careful not to overcook or they will be tough!)
  6. Remove from heat and allow to rest for a few minutes.

Well, I think I may have just discovered the secret to a juicy and flavorful piece of meat that will leave your taste buds dancing. I mixed up this pork chop rub, marinated my pork chops and then grilled them up. The result was surprising: I felt like I was eating a piece of steak. Can you guess what the secret ingredient is?

Pork Rub

1 Tablespoon Coffee Grounds
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
1/2 Teaspoon Paprika
1/2 Teaspoon Chili Powder
1/4 Teaspoon Cayenne Pepper
1 Teaspoon Sugar
-Mix all ingredients together in a bowl.

Grilled Pork Chops

4-5 Pork Chops (or you can use pork tenderloin)
Extra Virgin Olive Oil, enough to coat meat
Pork Rub (see recipe above)
-Coat the pork chops lightly in oil.
-Massage the pork rub into the meat on both sides, until coated.
-Marinate for at least an hour or more.
-Preheat grill.
-Remove the pork chops from the marinade and place on the grill.
-Grill 4-5 minutes on each side.
-Remove from the grill and lightly cover with aluminum foil.
-Allow the pork chops to rest for 10-15 minutes before serving.
