Chocolate. Lava. Cake.
I placed a period after each of those words so you can pause between each one and take a second to fully comprehend the treat that you are in for.
Chocolate on it’s own is divine but a chocolate lava cake that oozes liquid chocolate from it’s center – now that’s pure bliss!
A chocolate lava cake makes for an impressive Valentine’s Day treat but it is so easy to make. Would you believe that all it takes to make two individual ooey-gooey molten chocolate cakes is a handful of ingredients you probably already have in the pantry and about 10 minutes in the oven.
Top off your chocolate lava cakes with whipped cream, fresh berries or a sprinkle of powdered sugar and you have a seemingly gourmet dessert ready to share with your Valentine.

Ingredients
- 2 Tablespoons Coconut Oil (or butter)
- 1/4 Cup Chocolate Baking Chips (I used bittersweet 60% cacao but you can use your favorite)
- 1 Large Egg
- 1/2 Cup Powdered Sugar
- 3 Tablespoons Oat Flour* (or all-purpose flour)
- 1 Teaspoon Coffee Liquor (or vanilla extract)
Instructions
- Preheat oven to 400 degrees F.
- Thoroughly grease two small ramekins and set aside.
- In a microwavable bowl, heat chocolate chips and coconut oil for 1 minute.
- Stir until chocolate is completely melted. Add more time in 30 second increments, if necessary.
- Add in the egg and beat until smooth.
- Stir in the powdered sugar, followed by the flour and coffee liquor.
- Once everything is thoroughly combined, evenly distribute the mixture between the two greased ramekins.
- Bake for 10-12 minutes. The center will remain soft and jiggly and the edges should puff up slightly.
- Remove from the oven and allow to cool for 1 minute.
- Place each ramekin upside down on a plate and allow them to fall out. (You may need to use a knife around the edges and gently tap the bottom)
- Top with berries, powdered sugar or whipped cream and enjoy!
Notes
- *Make your own oat flour by grinding up old fashioned oats in a blender or spice grinder. Make sure to grind until you have a fine powder.
