Pico de Gallo (Salsa Fresca)Oh the wonderful sounds of a modern day morning! Today is one of those days I just feel like I didn’t get enough sleep.
First, I was awoken numerous times by my husband’s radio alarm. He can sleep through pretty much anything but I get awoken at the smallest of sounds. When the radio alarm goes off and it’s a song I know, I start singing along in my head until he finally shuts the thing off, but by then I’m pretty awake. Eventually I drift back to sleep only to be awoken by the recorded sound of a gun being fired. (I think he has that sound set for text messages or something.) Not too long after that, a melodic ringing from his phone. Then my phone starts with all kinds of rings and dings and notification sounds and of course Finley is up and moving around now and letting me know I need to wake up and let him out.
I’m thinking we should really put the phones on silent or move them out of the room from now on.
Onward and upward! I had dessert for breakfast this morning by indulging in my Butternut Squash Muffins. Though tired I may be, today is not so bad after all! To make it even better I’m sharing an easy Pico de Gallo recipe. I could eat Pico de Gallo on almost anything, I even prefer it over salsa. I’m hoping to make it to the farmer’s market tomorrow so I can make another batch with some fresh and tasty tomatoes.

What is Pico de Gallo?
The base of Pico de Gallo, also known as Salsa Fresca, is made with tomatoes, onion and chilies. Often times, other ingredients like citrus juice and spices are added in. Pico de Gallo usually contains less liquid than a salsa and is most commonly used as a condiment on various dishes. My favorite way to enjoy Pico de Gallo is to top my tortilla chips with it.

Pico de Gallo (Salsa Fresca)

4 Roma Tomatoes, choppedPico de Gallo (Salsa Fresca)
1/2 Red Onion, finely chopped
1 Jalapeno, seeded and finely chopped
1 Tablespoon Cilantro, chopped
1/8 Cup Lime Juice
1/2 Teaspoon Kosher Salt
Pinch each of:
Chili Powder
Onion Powder
Garlic Powder
Black Pepper
Cumin
-Combine all ingredients in a bowl.
-For best flavor, allow to marinate for an hour or more before serving.
